Food, vitamins, minerals whatever work in a chemical reaction to process once consumed. I didn't find out specifically about the carbs, but I imagine that it blocks the radio fall out they inject you with so the machine can trace what's going on where. It images blood flow, I think it says and nutrients go into the blood stream, I believe. But what do carbs do to blood? They make tummys very happy, that's all I know.
